NASA-backed scientists turn plastic waste into edible cookies

Researchers at Southern Illinois University have cracked something really clever - they've engineered yeast to transform plastic waste and agricultural leftovers into actual food ingredients like proteins, vitamins, and flavorings. So here's the thing: they start by breaking down PET plastic (think soda bottles) and biomass using a special heat and pressure technique, then feed these smaller molecules to their genetically programmed yeast, which does the heavy lifting of conversion. The team then combines these yeast-derived ingredients with fiber, starch, and sweetener, pushing the mixture through a 3D printer to create protein-packed cookies they call µBites. This approach could be a game-changer both for tackling plastic pollution and food insecurity - with potential uses ranging from disaster zones to deep space missions where regular food supplies just aren't an option.
