The tropical sweet potato is taking root in Sweden

So here's what's exciting - sweet potatoes, originally from the tropics, are being tested across Sweden right now, with trials running from Skåne all the way up to Norrbotten. Researchers at Sweden's agricultural university are working with international partners to develop Swedish-adapted varieties that can thrive even in cooler climates. What makes this really interesting is that sweet potatoes are incredibly tough and resource-efficient plants - they handle drought well and need very few nutrients compared to regular potatoes. And this is the best part: within three to four years, Swedish farmers could be offering us a much wider range than what we find in stores today - orange, yellow, white varieties with different textures and flavors instead of the same Egyptian import we always see.
